Cinnamon, Spice, and Everything Nice

With Halloween nearing and Thanksgiving around the corner all of our favorite "holiday treats" are here!  I welcome the holidays with open arms and open stomach and I love trying new recipes.  My sister and I baked a pumpkin pie cake with cinnamon buttercream frosting - and I must say it was fabulous ;)  Here are the recipes - baked with love.



Cinnamon Buttercream Frosting

Ingredients
  • 1/2 cup butter, room temp
  • 2 cups confectioner's sugar
  • 3 Tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
INSTRUCTIONS

Place the butter in a mixing bowl and mix on low until it turns creamy. At first it will stick to your beaters, but just let it mix for a few moments and it will start to soften. Add the confectioner's sugar one cup at a time, slowly incorporating with your mixer on low.
Add the milk, vanilla and ground cinnamon and mix on low until fully incorporated. If it is too thick for you, add a bit more milk, if it is too runny for you, add a bit more confectioner's sugar.

Pumpkin Pie Cake Recipe

Ingredients

  • 1 large can pumpkin pie mix (has the sugar and spices in it)
  • 1 large can evaporated milk
  • 4 eggs
  • 1 white or yellow cake mix

Instructions

Mix the pumpkin pie mix, cake mix, milk, and eggs together. Pour into 9 x 13 inch baking pan. Bake at 350F for 1 hour. Cool. Serve with whipped cream or frozen whipped topping, thawed. Serves 12 to 15.
